Chicken Cutlets

Ingredients

* 500g minced chicken

* 1 tbsp ginger garlic paste

* 1 tsp cumin

* 1 tsp coriander powder

* ½ tsp chilli flakes

* 2 tbsp breadcrumbs

* Salt & pepper

* Spring roll pastry or bean curd skin

Method

1. Mix all filling ingredients together.

2. Roll tightly into cigar shapes.

3. Pan fry or air fry until beautifully browned and juicy inside.

Ingredients

* 500g minced chicken

* 2 medium potatoes, boiled and mashed

* 1 small onion, finely diced

* 3 garlic cloves, minced

* 1 tsp paprika

* 1 tsp white pepper

* 1 tsp curry powder

* Salt to taste

* 1 egg

* 1 cup breadcrumbs

* Oil for shallow frying

Method

1. Sauté onions and garlic until fragrant.

2. Add minced chicken, paprika, curry powder, pepper and salt. Cook until dry.

3. Mix with mashed potatoes and let cool.

4. Shape into small rounds.

5. Dip in egg, coat with breadcrumbs.

6. Shallow fry until deep golden and crisp.

Chicken Seekh Kabeb

Easy to follow recipe

* 1 cup coriander

* ½ cup mint

* ½ cup coconut milk

* 1 green chilli

* Juice of 1 lime

* Salt

Blend until silky smooth

Herbed Coconut Chutney

* 4 tomatoes

* 3 dried chillies soaked

* 2 garlic cloves

* 1 tbsp sugar

* Salt

* Splash of vinegar

Blend and simmer until thick and glossy.
